Cheesecake with Caramelized Apples

Minnesota Grown Honeycrisp apples, peeled, cored, sliced

Directions
- In a small mixing bowl, combine mascarpone and brown sugar; refrigerate, covered, until ready to serve.
- In a large skillet over medium heat, melt butter; stir in brown sugar until dissolved.
- Add apple slices; cook, stirring frequently, until apples release their juices and start to soften (about 5 min.).
- Sprinkle with cinnamon; continue cooking, turning occasionally, until apples have a light crust and are golden-brown (10-15 min.).
- Divide apple mixture among individual cheesecake slices; top with a dollop of brown sugar mascarpone.
