Yogurt Mascarpone Icing

Makes about 3 ½ cups

Ingredients

16 oz. mascarpone cheese, at room temperature
½ cup plain full-fat yogurt
½ cup heavy cream, very cold
½ cup superfine sugar
2 tbsp. Kowalski's Pure Honey

Directions
  1. In a large mixing bowl, combine all ingredients.
  2. Using an electric mixer, beat mixture slowly at first, then at high speed until stiff peaks form.
  3. Use immediately or store in the refrigerator for 1-2 hrs. before using and serving. Try it in our recipe for Tomato Soup Cupcakes.
