Dried Cherry and Almond Rice Pilaf
Ingredients
3 tbsp.
Kowalski's Butter
¼ cup
chopped onion
1 tsp.
kosher salt
1 ½ cups
brown rice
2 ¼ cups
low-sodium chicken broth
1 tsp.
orange zest
¾ cup
dried tart cherries
½ cup
sliced almonds
2 tbsp.
chopped fresh Italian parsley
Directions
- In a large skillet, melt butter over medium heat. Add onion; cook until soft (about 5 min.).
- Season onion with salt; stir in rice and cook until onion become translucent (about 3 min.).
- Add broth and zest to the skillet; bring to a boil over medium-high heat
- Reduce heat to low; continue cooking, covered, until rice is tender (15-20 min.).
- Add cherries; remove pan from heat.
- Let stand, covered, for 10 min.
- Sprinkle with almonds and parsley; toss with a fork.
