Caramel Apple Bread Pudding

Ingredients

18 Kowalski's Mini Morning Buns (2-3 days old), quartered
1 cup Kowalski's Honey Toasted Pecans, coarsely chopped
¼ cup Kowalski's Butter
1 cup brown sugar, divided
6 eggs
1 pt. half-and-half
1 tsp. Kowalski's Organic Madagascar Vanilla Extract
3 baking apples, peeled, cored, sliced
½ tsp. Kowalski's Ground Cinnamon
- Kowalski's Classic Caramel Sauce, to taste, warmed
- mascarpone cheese, to taste

Directions
  1. Arrange morning buns evenly in a 13x9" glass baking dish sprayed lightly with cooking spray; sprinkle pecans on top.
  2. In a small saucepan, melt butter and ¼ cup brown sugar until sugar is dissolved; drizzle over morning buns.
  3. In a medium mixing bowl, whisk together eggs, half-and-half, remaining brown sugar and vanilla; pour mixture over entire dish.
  4. Cover and refrigerate for at least 2 hrs. to overnight.
  5. Preheat oven to 350°.
  6. Toss apple slices with cinnamon; arrange over morning buns.
  7. Bake in preheated oven, covered, for 30 min.
  8. Uncover; continue baking until browned (15-20 min.).
  9. Cut into squares; serve with warm caramel sauce and a dollop of mascarpone.
