Favorite Holiday Salad
Ingredients
- Load up on the good for you veggies. Use a lighter hand on the cheese and prosciutto – they'll supply that wonderful umami, a.k.a satisfying savory taste, but "less is more".
- Make a creamy dressing better for your health by subbing in a little Greek yogurt for the mayonnaise.
- chopped romaine lettuce and mixed greens
- Creamy White Balsamic Dressing (recipe below), to taste
- radishes, thinly sliced
- red onion, halved and very thinly sliced
- radicchio, shredded
- dried cherries, chopped
- red grapes, halved
- red pear, cut into matchsticks
- feta cheese, crumbled
- thinly sliced prosciutto
- prepared croutons, crushed, to taste
- freshly ground Kowalski's Black Peppercorns
Directions
- In a large salad or mixing bowl, toss lettuce and greens with a generous amount of dressing.
- Arrange dressed greens on a serving platter; top with radishes, onion, radicchio, cherries, grapes, pear, cheese and prosciutto, arranging toppings in strips or wedges over the greens.
- Drizzle with additional dressing to taste; sprinkle with croutons and pepper to taste.
- Serve with additional dressing and pepper on the side.
CREAMY WHITE BALSAMIC VINAIGRETTE: In a medium mixing bowl, whisk together 3 tbsp. white balsamic vinegar, 3 tbsp. mayonnaise, 1 tbsp. Dijon mustard and 1 tsp. Kowalski's Pure Honey. Season to taste with kosher salt and freshly ground Kowalski's Black Peppercorns. Drizzle in ½ cup Kowalski's Extra Virgin Olive Oil, whisking constantly. Whisk in up to 2 tbsp. finely chopped herbs (such as chives, Italian parsley, dill or a combination); adjust seasoning to taste. Makes about ¾ cup.
