Toasted Sesame and Date Balls

Ingredients

8 Medjool dates, pitted
½ cup flaked unsweetened coconut
¼ cup (about 12) large dried apricots
¼ cup dried cherries
¼ cup roasted and salted pepitas
2.5 oz. jar sesame seeds, toasted

Directions
  1. In a food processor, pulse dates with coconut until finely minced and mixture just starts to cling together.
  2. Add apricots and cherries; pulse several times until fruit is finely chopped but small bits are still visible.
  3. Add pepitas; pulse 2-3 times.
  4. Transfer mixture to a medium mixing bowl; add sesame seeds. Using clean hands, mix seeds into fruit mixture (as if you were mixing meatloaf).
  5. Roll and shape mixture into approx. 18 balls slightly less than 1" in diameter.
  6. Store at room temperature, tightly covered, for up to 1 week.

Tasty Tip:

  • To toast sesame seeds, heat in a small skillet over low heat until lightly browned (3-5 min.), stirring frequently.
