Skol, Vikings! Steak Taco Tailgate
Ingredients
2 lb.
flank steak
- Kowalski's Extra Virgin Olive Oil, for grilling
- kosher salt and freshly ground Kowalski's Black Peppercorns, to taste

(6") whole-wheat tortillas
- Purple and Gold Salsa, to taste
- other toppings, your choice: thinly sliced radishes, fresh cilantro, sliced avocado and crumbled queso fresco
- yellow and blue corn tortilla chips, for serving
Directions
- Preheat a grill or broiler to high.
- Rub steak liberally with oil; season with salt and pepper.
- Grill or broil steak to desired doneness (4-5 min. per side); let rest for 10 min.
- While steak cooks, heat tortillas a few at a time on the grill just until warm and pliable (about 1 min.), turning once.
- Slice steak thinly on the diagonal.
- Fill warm tortillas with slices of steak; top with salsa and other desired toppings, reserving some salsa for serving.
- Serve immediately with tortilla chips and remaining salsa on the side.
Tasty Tip:
- Try a Southwestern meat marinade instead of the oil, salt and pepper in this recipe. Find one near the BBQ sauces in the Grocery Department.
