Perfect Pork Chops

Ingredients

4 (1" thick) pork chops (about 2 lbs. total)
- kosher salt and freshly ground Kowalski's Black Peppercorns, to taste

Directions
  1. Preheat a clean grill or grill pan to high.
  2. Season chops with salt and pepper.
  3. Arrange chops on preheated grill or grill pan; cook, turning once when dark grill marks form and meat releases easily from grill grates, until slightly pink in center and meat reaches an internal temperature of 140° (10-14 min. total).
  4. Remove chops from heat; tent with foil.
  5. Let rest for 10 min. before serving.
