Penne in Tomato Cream Sauce with Italian Sausage
Ingredients

unsalted butter
1 tbsp.
olive oil
⅔ cup
chopped onion
2 cloves
garlic, finely minced
12 ½ oz.
Kowalski's Signature Smoked Italian & Mozzarella Sausage, in ½" slices
⅔ cup
dry white wine
14 ½ oz.
canned petite diced tomatoes with their juice
1 cup
heavy cream
½ tsp.
kosher salt
¼ tsp.
coarse ground black pepper
¼ cup
chopped fresh Italian parsley, divided
1 lb.
penne pasta
1 cup
freshly grated Parmesan cheese
Directions
In an extra-large saucepan, heat butter and oil over medium-high heat; add onion, sautéing until tender (about 7 min.). Add garlic; cook until light golden-brown (1 ½-2 min.) Add sausage; sauté until golden-brown (about 7 min.). Add wine to the pan; bring to a boil, cooking until liquid nearly evaporates (about 2 min.). Add tomatoes; simmer 3 min. Add cream; simmer until sauce thickens slightly (about 5 min.). Stir in salt, pepper and 1/2 of the parsley. Meanwhile, cook pasta according to pkg. directions; drain. Add pasta to saucepan; stir into sauce with 3/4 of the cheese. Serve with remaining cheese and parsley.
