Boneless New York Strip Roast
Ingredients

Kowalski's Certified Akaushi Boneless New York Strip Roast
  
                                  
  2-3 tbsp.
seasoning rub of your choice (such as Kowalski's Signature Northwoods Grill Seasoning or Classic Garlic & Herb Rub), to taste
  
                                  
  2 tbsp.
Kowalski's Extra Virgin Olive Oil
  
                                  
  
- Kowalski's English-Style Horseradish Sauce, for serving
  
                      Directions
          - Preheat oven to 350°.
- Rub roast on all sides with seasoning.
- In a large oven-safe skillet, heat oil over medium-high heat until shimmering but not smoking. Sear roast in hot oil on all sides until well browned (about 1-2 min. per side), finishing fat-side up.
- Move skillet to preheated oven; roast to desired doneness:
 Rare: 60-65 min. at 120-130°
 Medium-Rare: 70-75 min. at 130-140°
 Medium: 75-80 min. at 140-150°
 Medium-Well: 80-85 min. at 150-155°
 Well Done: 85-90 min. at 155-160°
- Remove roast from oven and tent loosely with foil; let rest for 20 min. (roast will increase 5-10° as it rests). Slice and serve with horseradish sauce.
