Marshmallow Meringue

Makes enough for filling and frosting 1 (8-9") 2-layer cake or for 1 (9-11") tart

Ingredients

4 egg whites
1 ½ cups sugar
¼ cup water, cold
½ tsp. cream of tartar
½ tsp. kosher salt
2 tsp. Kowalski's Organic Madagascar Vanilla Extract

Directions
  1. In a double boiler over simmering water, whisk together egg whites, sugar, water, cream of tartar and salt; heat to 160°, whisking constantly (7-12 min.).
  2. Pour hot meringue mixture into the bowl of an electric mixer. Add vanilla; beat on medium-high until cooled to room temperature and icing is shiny and stiff.
  3. Use for topping or filling cakes, tarts and cupcakes, as in our recipes for Lemon Meringue Tart (pictured) and S'mores Cupcakes.
