Marshmallow Meringue
Ingredients

egg whites
1 ½ cups
sugar
¼ cup
water, cold
½ tsp.
cream of tartar
½ tsp.
kosher salt
2 tsp.
Kowalski's Organic Madagascar Vanilla Extract
Directions
- In a double boiler over simmering water, whisk together egg whites, sugar, water, cream of tartar and salt; heat to 160°, whisking constantly (7-12 min.).
- Pour hot meringue mixture into the bowl of an electric mixer. Add vanilla; beat on medium-high until cooled to room temperature and icing is shiny and stiff.
- Use for topping or filling cakes, tarts and cupcakes, as in our recipes for Lemon Meringue Tart (pictured) and S'mores Cupcakes.
