Chocolate Walnut Cookies
Ingredients
3 cups
confectioners' sugar
½ cup plus 3 tbsp.
cocoa powder
¼ tsp.
salt
10 oz.
walnuts, toasted and finely chopped

egg whites, lightly beaten
1 tbsp.
Kowalski's Organic Madagascar Vanilla Extract
Directions
- Preheat oven to 350°.
- In a large mixing bowl, sift together sugar, cocoa and salt.
- Stir in walnuts.
- Add egg whites and vanilla; stir until just moistened.
- Drop ½ of the batter in 1 tbsp. scoops 1 ½-2" apart on 2 parchment-lined baking sheets.
- Bake pans one at a time in the preheated oven until tops are lightly cracked and glossy (about 15 min.), rotating and switching pans halfway through.
- Remove from oven; let cookies rest on sheet pan for 2 min.
- Transfer parchment with cookies to a wire rack (do not remove parchment from cookies until they are completely cool).
- Gently peel cookies off parchment; store in an airtight container at room temperature for up to 1 week.
