Chocolate Walnut Cookies

Ingredients

3 cups confectioners' sugar
½ cup plus 3 tbsp. cocoa powder
¼ tsp. salt
10 oz. walnuts, toasted and finely chopped
4 egg whites, lightly beaten
1 tbsp. Kowalski's Organic Madagascar Vanilla Extract

Directions
  1. Preheat oven to 350°.
  2. In a large mixing bowl, sift together sugar, cocoa and salt.
  3. Stir in walnuts.
  4. Add egg whites and vanilla; stir until just moistened.
  5. Drop ½ of the batter in 1 tbsp. scoops 1 ½-2" apart on 2 parchment-lined baking sheets.
  6. Bake pans one at a time in the preheated oven until tops are lightly cracked and glossy (about 15 min.), rotating and switching pans halfway through.
  7. Remove from oven; let cookies rest on sheet pan for 2 min.
  8. Transfer parchment with cookies to a wire rack (do not remove parchment from cookies until they are completely cool).
  9. Gently peel cookies off parchment; store in an airtight container at room temperature for up to 1 week.
