Air-Fried Taquitos

Ingredients

16 (6") corn tortillas, warmed
2 cups (approx.) fillings, as desired (see suggestions below), to taste
1 cup (approx.) finely shredded Cheddar or Monterey Jack cheese
- Kowalski's Extra Virgin Olive Oil Spray
- Kowalski's Fresh Pico de Gallo and finely chopped fresh Italian parsley or snipped chives, for garnish
- Kowalski's Signature Queso Blanco (from the Deli Department) or Kowalski's Signature Fresh Buttermilk Ranch Salad Dressing (from the Produce Department), for serving

Directions
  1. Preheat air fryer to 400°.
  2. Fill warm tortillas evenly with about 2 tbsp. filling, spread evenly across the widest part of each tortilla; sprinkle fillings evenly with cheese.
  3. Roll tortillas tightly into a cigar shape; secure with a toothpick(s). Spray evenly on all sides with oil.
  4. Working in batches, air-fry taquitos for 4 min.; flip and air-fry 2-4 min. more until desired dark golden-brown color appears.
  5. Pile taquitos on a serving platter; garnish with pico and sprinkle with parsley and chives.
  6. Drizzle with queso or dressing; serve immediately with additional queso or dressing on the side for dipping.

  • sautéed, finely chopped mushrooms, bell peppers and/or onions

Tasty Tip:

  • To warm tortillas, wrap 4-8 tortillas at a time in slightly damp paper towels and heat in the microwave until very warm (up to 45 sec.).
