Gazpacho Bloody Mary

Serves 6

Ingredients

1 medium cucumber, peeled, seeded, cut into 1" pieces
⅓ cup coarsely chopped onion
½ red or yellow bell pepper, seeded, cut into 1" pieces
1 clove garlic
1 tsp. prepared horseradish
2 cups tomato juice
1 tsp. kosher salt, divided
½ tsp. freshly ground Kowalski's Black Peppercorns, divided
6 shots vodka
6 cocktail stirrers (or cocktail picks, if serving with garnishes)
- garnishes (optional): cornichons, green olives, chopped red or yellow bell pepper, and pickled pearl onions

Directions
  1. Purée cucumber, onion, bell pepper, garlic, horseradish, tomato juice, ½ salt and ¼ black pepper in a blender.
  2. Pour Bloody Mary mixture into a large pitcher; cover and refrigerate until cold.
  3. Pour remaining salt and pepper onto a flat rimmed dish; mix together until well combined. Moisten the rims of 6 martini glasses; dip rims in salt and pepper mixture to coat.
  4. Fill prepared glasses with ice; divide Bloody Mary mixture evenly among glasses.
  5. Pour a shot of vodka into each glass.
  6. Add a cocktail stirrer to each glass (or, if serving with garnishes, skewer garnishes onto cocktail picks before adding to glasses).
