Orange Crush

Ingredients

This recipe provides 100% of the A and C vitamins you need in a day. It's also rich in potassium.

2 cups peeled and chopped sweet potato
2 small carrots, chopped
2 tsp. Kowalski's Extra Virgin Olive Oil
1 large naval orange, peeled and coarsely chopped
2 cups Kowalski's Signature Freshly Squeezed Orange Juice (or more as desired)

Directions
  1. Preheat oven to 450°.
  2. In a large mixing bowl, toss sweet potato and carrot with oil.
  3. Spread vegetables in an even layer on a parchment-lined baking sheet; roast in preheated oven until dark on the edges and just tender (about 20 min.).
  4. Remove from oven; set vegetables aside to cool completely.
  5. In a blender or food processor, combine sweet potato, carrot, orange and juice; purée until smooth. Thin with additional juice or water, if desired.
  6. Serve immediately or refrigerate for up to 2 days; shake before serving.

 

VARIATION: To make an Orange Crush Smoothie, add roughly 2 cups ice, 1 cup low-fat plain yogurt and 2 peeled bananas to ingredients. Serves 5.
