Sweet and Golden Potato Gratin
Ingredients
- Kowalski's Butter, as needed for greasing the baking dish
3 tbsp.
Kowalski's Extra Virgin Olive Oil, divided
2
medium sweet onions, sliced
1 tsp.
minced garlic
1 ½ lbs.
medium round Kowalski's Yukon Gold Potatoes, unpeeled, sliced ¼" thick
1 ½ lbs.
orange sweet potatoes, peeled, sliced ¼" thick
1 ½ tsp.
kosher salt
¼ tsp.
freshly ground Kowalski's Black Peppercorns
1 cup (4 oz.)
grated Gruyère cheese
1 tbsp.
snipped fresh thyme
Directions
- Preheat oven to 400°. Butter a 13x9" glass baking dish; set aside.
- In a medium sauté pan, heat 2 tbsp. oil over medium-low heat. Add onions; sauté until translucent (8-10 min.).
- Stir in garlic; continue cooking for 1 min.
- Spread onion mixture over bottom of buttered baking dish.
- Alternating between Yukon Gold and sweet potatoes, arrange 4 rows of potato slices down the length of each pan, overlapping tightly. Sprinkle with salt and pepper; drizzle with remaining oil.
- Bake in preheated oven, covered, until potatoes are tender (about 30 min.).
- Uncover; sprinkle potatoes evenly with cheese and continue baking until cheese is browned (about 10 min.).
- Sprinkle with thyme; serve immediately.
