Tarragon Pesto and Pasta
Ingredients
1 cup packed
fresh tarragon
1 cup packed
fresh parsley
2 cloves
garlic
2 tbsp.
pine nuts
½ tsp.
kosher salt
⅓ cup
extra virgin olive oil
3 tbsp.
freshly grated Parmesan cheese
1 lb.
dry penne pasta, prepared according to pkg. directions
2 cups
shredded rotisserie chicken (optional)
2 cups
cooked green beans (optional)
1 cup
small grape tomatoes (optional)
Directions
- In the bowl of a food processor, combine first 5 ingredients (through salt); process until smooth.
- With the processor running, slowly stream in oil.
- Stir in Parmesan cheese.
- Toss pasta with pesto, adding chicken, green beans and tomatoes, if desired.
Tasty Tip:
- If you like the flavor of black licorice, you'll love this take on pesto! For a more classic pesto flavor, substitute fresh basil for the tarragon in this recipe.
