Humboldt Fog Classic Salad

Ingredients

A note about gluten: To make this recipe gluten free, use a gluten-free mustard in place of the Dijon and a gluten-free tamari in place of soy sauce

3 tbsp. white, apple cider or white balsamic vinegar
1 tsp. Dijon mustard
1 tsp. soy sauce
1 tsp. honey
¼ cup extra virgin olive oil
- salt and freshly ground black pepper, to taste
4 cups mixed baby greens
½ cup toasted pecans, roughly chopped
2 pears, thinly sliced
4 oz. Cypress Grove Humboldt Fog Cheese, thinly sliced or gently crumbled

Directions
  1. In a small mixing bowl, combine first 4 ingredients (through honey).
  2. Slowly whisk in olive oil; add salt and pepper to taste.
  3. In a large mixing or serving bowl, toss mixed greens gently with dressing.'
  4. Top greens with pecans, sliced pears and Humboldt Fog; serve immediately.
