Holiday Brussels Sprouts Salad
Ingredients
24 oz.
shaved or shredded Brussels sprouts
8 slices
Kowalski's Applewood Smoked Bacon, cooked crisp and chopped
⅔ cup
dried cherries or cranberries
⅔ cup
sliced almonds, toasted
½ cup
thinly sliced red onion
1 cup
citrus vinaigrette, divided
- kosher salt and freshly ground Kowalski's Black Peppercorns, to taste
4 oz.
soft crumbled goat cheese (optional)
Directions
- In a large salad or mixing bowl, combine sprouts, bacon, cherries, almonds and onion; add about ¾ cup of dressing and toss to coat.
- Season salad with salt and pepper to taste.
- Divide salad amongst 4 serving dishes; top with cheese and drizzle with remaining dressing. Serve immediately.
