Salmon with Yogurt and Fast Cucumber Salad

Ingredients

1 lb. salmon fillet, cut into 4 portions
1 tbsp. Kowalski's Extra Virgin Olive Oil, plus more for serving
½ tsp. kosher salt, plus more for seasoning
¼ tsp. freshly ground Kowalski's Black Peppercorns, plus more for seasoning
½ cup full-fat plain Greek yogurt
- Fast Cucumber Salad, to taste
- fresh dill fronds, for garnish

Directions
  1. Preheat grill to medium-high heat.
  2. Brush fish lightly with oil; season with salt and pepper.
  3. Grill fish skin-side down on preheated grill until fish is flaky and opaque throughout (10-15 min., depending on thickness).
  4. Smear an equal amount of yogurt on 4 serving plates. Drizzle with oil; sprinkle with salt and pepper.
  5. Leaving skin behind, transfer a piece of salmon onto each plate on top of yogurt.
  6. Top fish with cucumber salad; garnish with dill fronds before serving.
