Perfect Lamb Chops

(1 ¼-1 ½" thick) lamb rib chops or bone-in lamb loin chops (about 3 ½ lbs. total)
- kosher salt and freshly ground Kowalski's Black Peppercorns, to taste
- sauce (your choice), for serving
Directions
- Preheat a clean grill or grill pan to high.
- Season chops with salt and pepper.
- Arrange chops on preheated grill or grill pan; cook until slightly pink in the center and meat reaches an internal temperature of 140°, turning once when dark grill marks form and meat releases easily from grill grates (10-14 min. total).
- Remove from heat; tent chops loosely with foil. Let rest for 10 min. before serving with sauce of your choice.
