½ cup
Kowalski's Kickin' Kalbi Sauce
½ cup
Kowalski's Pure Honey
½ cup
Kowalski's Balsamic Vinegar
6 tbsp.
light or dark brown sugar
2 racks (about 5 lbs.)
Kowalski's Naturally Raised Pork Spareribs (or Baby Back Ribs)
3 tbsp.
Livia's Seasoning Salt
2 tbsp.
cornstarch
2 tbsp.
water
- garnishes, to taste: toasted sesame seeds and thinly sliced green onions
Directions
- In a medium mixing bowl, stir together kalbi, honey, vinegar and brown sugar; set aside.
- Cut racks between ribs into 3-4 evenly sized pieces; sprinkle both sides evenly with seasoning salt.
- Place ribs in a pressure cooker. Pour in sauce; cook on high for 30 min.
- Use a natural pressure release for 30 min.; manually vent remaining pressure.
- Preheat a broiler.
- Transfer ribs to a foil-lined sheet pan, meaty side up. Brush some sauce from the cooker over the ribs; broil until edges start to look crisp (about 2 min.).
- Remove ribs from oven; tent with foil and set aside.
- While ribs rest, turn on the pressure cooker's sauté function; bring remaining sauce to a boil.
- In a small mixing bowl, combine cornstarch and water; whisk into sauce to thicken.
- Cut ribs into individual rib pieces; place on a platter.
- Drizzle ribs with sauce; garnish ribs with sesame seeds and onion.
- Serve ribs with remaining sauce on the side for dipping.
Tasty Tips:
- You can also cook these ribs in a slow cooker for 8 hrs. on low heat; broil as directed. Pour remaining sauce from the slow cooker into a saucepan; thicken on the stovetop over medium-high heat as directed above.
- Kowalski's Original Kalbi Marinade may be used instead of Kickin' Kalbi.
