Zesty Lime Bars
Ingredients
1 ½ cups plus 3 tbsp.
flour, divided
¾ cup
Kowalski's Unsalted Butter, at room temperature
⅓ cup
confectioners' sugar

cream cheese, at room temperature
1 ⅓ cups

Kowalski's Freshly Squeezed Lime Juice (from the Produce Department)
¼ cup
Kowalski's Freshly Squeezed Lemon Juice (from the Produce Department)
1 tsp.
Kowalski's Organic Madagascar Vanilla Extract
2 tsp.
lime zest, plus more for garnish
Directions
- Grease the bottom and sides of an 8x8" baking pan; line with parchment paper, leaving a 2" overhang on all sides.
- Using a stand mixer with paddle attachment, mix 1 ½ cups flour, butter, confectioners’ sugar and salt on low speed just until dough is clumpy (it will resemble wet sand and appear somewhat dry, but will hold together when squeezed.).
- Pour crumbs into the prepared pan; press mixture very firmly and evenly into the bottom of the pan; place pan in freezer 20 min.
- Preheat oven to 350°.
- Bake crust in preheated oven until lightly browned (about 20 min.).
- In a blender, blend cream cheese, remaining flour, sugar, eggs, juices, vanilla and 2 tsp. zest on medium speed until smooth (about 2 min.).
- Pour filling over crust; bake until filling is set (28-33 min.).
- Remove from oven; cool completely.
- Serve topped with whipped cream and lime zest.
