Sour Cherry Panna Cotta

Serves 8

Ingredients

1 cup whole milk
2 ¾ tsp. unflavored gelatin
½ cup granulated sugar
3 cups heavy cream
2 tsp. vanilla extract
- pinch salt
12.5 oz. Stonewall Kitchen Sour Cherry Jam

Directions
  1. In a small saucepan, combine milk and gelatin over medium heat; heat to 135°.
  2. Add sugar; stir until sugar and gelatin are completely dissolved.
  3. Remove from heat; stir in cream.
  4. Strain mixture.
  5. Stir in vanilla and salt; cool to 50°.
  6. Scoop 1 tbsp. jam into the bottom of 8 (8 oz.) wine glasses; pour ½ cup cream mixture into each glass.
  7. Refrigerate for at least 2 hrs.
  8. Top each glass with another 1 tbsp. jam; serve cold or at room temperature.
