Peanut Butter Bonbons

Makes about 36 pieces

Ingredients

1 ½ cups shelf-stable creamy peanut butter
½ cup Kowalski's Salted Butter (or ½ cup Kowalski's Unsalted Butter plus ¼ tsp. kosher salt)
1 tsp. Kowalski's Organic Madagascar Vanilla Extract
1 lb. (about 3 ¾ cups) confectioners' sugar
8-9 oz. dark or white chocolate, finely chopped

Directions
  1. In a large microwave-safe mixing bowl, combine peanut butter and butter. Heat mixture in 30 sec. increments until almost melted; stir until smooth.
  2. Stir in vanilla.
  3. Add sugar; stir quickly until well combined.
  4. Form balls approx. ¾-1" in diameter; chill until firm (at least 30 min.).
  5. In a small microwave-safe mixing bowl, microwave chocolate at 50% power in 30 sec. increments until almost melted, stirring between intervals.
  6. One at a time, use a fork to dip balls in melted chocolate and place candy on a parchment-lined baking sheet; refrigerate until set.
  7. Store in the refrigerator, tightly covered, for up to 2 weeks.
