Cherry Orange Poppy Seed Muffins
Ingredients
2 cups
flour
¾ cup
sugar
1 tbsp.
poppy seeds
1 tbsp.
baking powder
¼ tsp.
salt
1 cup
milk
¼ cup
butter, melted
1
egg, slightly beaten
12 cup
dried tart cherries
3 tbsp.
grated orange peel
Directions
- Preheat oven to 400°.
- In a large mixing bowl, combine flour, sugar, poppy seeds, baking powder and salt.
- Add milk, melted butter and egg; stir just until dry ingredients are moistened.
- Gently stir in cherries and orange peel.
- Fill paper-lined muffin cups ¾ full; bake in a preheated oven until a wooden toothpick inserted in the center comes out clean (18-22 min.).
- Remove from oven; let cool in pan for 5 min.
- Remove from pan; serve warm or let cool completely.
