Salty Roasted Pumpkin Seeds

Ingredients

8 cups water
2 cups pumpkin seeds
4 tsp. kosher salt
1 tbsp. Kowalski's Extra Virgin Olive Oil

Directions
  1. Preheat oven to 400°.
  2. In a large saucepan, bring water, pumpkin seeds and salt to a boil over high heat.
  3. Reduce heat and simmer for 10 min.; drain.
  4. Spread olive oil in the bottom of a jelly-roll pan; sprinkle seeds in an even layer over oil.
  5. Roast in preheated oven until browned (10-20 min.), stirring halfway through.
