Roasted Pumpkin Seeds with Lime

Ingredients

- seeds from 1 large Minnesota Grown pumpkin or 2 smaller Minnesota Grown pumpkins
1 tbsp. Kowalski's Extra Virgin Olive Oil
1 tsp. kosher salt, plus extra for seasoning
1 tsp. garlic powder
- zest of 1 lime, divided

Directions
  1. Pull off any strands of flesh from pumpkin seeds; rinse seeds well. Let seeds dry on paper towels for several hrs.
  2. Preheat oven to 375°.
  3. In a medium mixing bowl, toss seeds with oil, salt, garlic powder and most of the zest.
  4. On a baking sheet lined with parchment paper, spread seeds out in a single layer; roast in preheated oven, stirring once or twice, until seeds are dry, sizzling and dark golden-brown in places (about 15 min.).
  5. Cool completely; season with reserved lime zest and salt to taste.
