Pink Punch
Ingredients
Not only pretty in pink, this juicy pick-me-up is rich in vitamin C and folate.
1 cup
chopped, steamed and peeled beets (about 4 small beets), such as Melissa's Steamed Baby Beets
½ cup
diced fresh pineapple
½-1
jalapeño pepper, stemmed and seeded, to taste
6 oz.
pineapple juice, or more as desired
Directions
Combine all ingredients in a blender or food processor; purée until smooth. Thin with additional juice or water, if desired. Serve immediately or refrigerate for up to 2 days; shake before serving.
VARIATION: For a Pink Punch Smoothie, add roughly 2 cups ice, 1 cup low-fat plain yogurt and 2 peeled bananas to ingredients. Serves 4.
