Irish Soda Bread

Ingredients

1 ⅔ cups flour
2 tbsp. sugar
1 tsp. baking powder
½ tsp. baking soda
½ tsp. salt
1 cup currants
⅔ cup buttermilk
¼ cup Kowalski's Butter, melted
1 egg

Directions
  1. Preheat oven to 375°.
  2. In a large mixing bowl, stir together flour, sugar, baking powder, soda and salt. Add currants; toss to evenly coat.
  3. In a separate mixing bowl, whisk together buttermilk, melted butter and egg.
  4. Stir wet ingredients into dry ingredients until just moistened (the batter will be stiff but sticky).
  5. Shape batter into a 6" round mound; make a large "X" about ½" deep on top of the batter.
  6. Bake in preheated oven until golden-brown and a toothpick inserted in the center comes out clean (25-30 min.).
  7. Cool completely before serving.
