Irish Soda Bread
Ingredients
1 ⅔ cups
flour
2 tbsp.
sugar
1 tsp.
baking powder
½ tsp.
baking soda
½ tsp.
salt
1 cup
currants
⅔ cup
buttermilk
¼ cup
Kowalski's Butter, melted
1
egg
Directions
- Preheat oven to 375°.
- In a large mixing bowl, stir together flour, sugar, baking powder, soda and salt. Add currants; toss to evenly coat.
- In a separate mixing bowl, whisk together buttermilk, melted butter and egg.
- Stir wet ingredients into dry ingredients until just moistened (the batter will be stiff but sticky).
- Shape batter into a 6" round mound; make a large "X" about ½" deep on top of the batter.
- Bake in preheated oven until golden-brown and a toothpick inserted in the center comes out clean (25-30 min.).
- Cool completely before serving.
