Superfood Stuffing
Ingredients
Superfood Stuffing lives up to its name. It's super rich in vitamin A and a good source of B vitamins and fiber.
1 ½ tsp.
Kowalski's Extra Virgin Olive Oil
½ cup
chopped yellow onion
1 rib
celery, diced
¾ lb.
peeled sweet potatoes, in ½" dice

Granny Smith apple, peeled and cored, in ½" dice (¾ cup)
8 oz. (about 4 ½ cups)
Kowalski's Stuffing Mix

eggs, beaten
½ cup
low-sodium chicken broth
½ cup
dried tart cherries
2 ½ tbsp.
chopped raw walnuts, toasted
1 ½ tsp.
chopped fresh sage
½ tsp.
kosher salt
¼ tsp.
freshly ground Kowalski's Black Peppercorns
Directions
- Preheat oven to 350°.
- In a large sauté pan, heat olive oil over medium heat.
- Stir in onion, celery, potatoes and apples; cook, stirring constantly, until sweet potato starts to soften (8-9 min.).
- Stir remaining ingredients into onion mixture.
- Scoop mixture into an 8x8" glass baking dish sprayed lightly with nonstick cooking spray.
- Bake, uncovered, until heated through (about 40 min.).
Tasty Tip:
- You can use Kowalski's Artisan Stuffing in place of Kowalski's Stuffing Mix. Find both seasonally in the Bakery Department.
