Southern Skillet Cornbread
Ingredients
7 tbsp.
Kowalski's Unsalted Butter, divided
1 ¼ cups
yellow cornmeal
¾ cup
flour
2 tsp.
baking soda
1 tsp.
kosher salt
2 tbsp.
sugar
1 ¼ cups
buttermilk
1
egg
Directions
- Preheat oven to 400°.
- In a small microwave-safe dish, melt 6 tbsp. butter in the microwave; set aside.
- In a 9" cast iron skillet, melt remaining butter in preheated oven; leave pan in the oven while you prepare the batter.
- In a large mixing bowl, whisk together next 5 ingredients (through salt).
- In a separate small mixing bowl, whisk together buttermilk and egg; mix wet ingredients into dry ingredients just until mixture is evenly moist.
- Stir 6 tbsp. melted butter into batter until just combined.
- Carefully pour batter into the hot skillet on top of the melted butter; bake until edges are nicely browned and a toothpick inserted in the center of the bread comes out clean (about 30 min.).
- Remove bread from oven; let rest for at least 10 min. before serving.
