Orzo and Feta Salad with Dill

Serves 4

Ingredients

1 cup orzo pasta, cooked according to pkg. directions, drained
3 tbsp. Kowalski's Extra Virgin Olive Oil
½ cup finely chopped fresh dill, plus extra for garnish
1 tsp. freshly grated lemon zest, plus extra for garnish
- freshly ground Kowalski's Black Peppercorns, to taste
2 cups halved cherry tomatoes
6 oz. crumbled feta cheese

Directions
  1. In a large mixing bowl, toss cooked orzo with oil; loosely cover with plastic wrap and cool completely in the refrigerator.
  2. Add dill and zest to pasta; toss.
  3. Season with pepper to taste; fold in tomatoes and feta.
  4. Garnish with additional dill and zest.

Tasty Tip:

  • This salad can be dressed up with chopped Kalamata olives, capers, diced cucumber and thinly sliced red onion, if desired.
