Ginger Mint Melon Salad

Ingredients

¼ cup Kowalski's Signature Freshly Squeezed Orange Juice
3 tbsp. freshly squeezed lime juice
2 tbsp. superfine sugar
1 ½ tbsp. finely chopped fresh mint
2 tsp. minced crystallized ginger
2 tsp. freshly grated lime zest
16 oz. pkg. (about 3 cups) Kowalski's Honeydew Chunks
16 oz. pkg. (about 3 cups) Kowalski's Watermelon Spears, cubed
4 ½ oz. (about 1 cup) fresh blueberries

Directions
  1. In a small mixing bowl, whisk together first 6 ingredients (through zest); set aside.
  2. In a large salad or mixing bowl, combine remaining ingredients; gently stir in dressing, tossing to coat. Serve immediately.

Tasty Tip:

  • One fresh lime will give you enough zest and juice for this recipe. Zest the lime first, then roll the fruit on the counter before cutting and juicing it.
