Parma Ham-Wrapped Halibut

Serves 4

Ingredients

8 fresh sage leaves
4 halibut fillets (6 oz. each)
- salt and freshly ground black pepper, to taste
8 slices Prosciutto di Parma
2 tbsp. olive oil
6 tbsp. Marsala wine
¾ cup vegetable stock, hot
1 tsp. balsamic vinegar

Directions
  1. Place 2 sage leaves on top of each halibut fillet; season with salt and pepper. Wrap 2 slices of prosciutto around each fillet.
  2. In a large skillet, heat oil over medium-high heat. Add fish to the pan; cook for 2-3 min., turning once.
  3. Add wine and stock to the pan; reduce heat and simmer, loosely covered, until fish is cooked through and flakes easily with a fork.
  4. Transfer fish to a warm serving platter. Whisk vinegar into pan; season sauce to taste and drizzle over fish.
