Pineapple Granitas
Ingredients
¼ cup
boiling water
2 tbsp.
superfine sugar
¼ cup
pineapple juice
¼ cup
Kowalski's Freshly Squeezed Lime Juice (from the Produce Department)
1 tbsp.
minced fresh mint
Directions
- In a 2-cup glass measuring cup, combine water and sugar; stir until sugar dissolves.
- Add ice to reach ½ cup; stir until ice dissolves.
- Add pineapple juice, lime juice and mint.
- Pour into a pie plate; freeze for 1 hr.
- Use a fork to scrape up forming ice crystals; return to freezer for 1 hr.
- Scrape surface of the granita again with a fork; return to freezer until solid (1 hr. more).
- Scrape again; scoop into 2 lowball glasses.
- Garnish with mint; serve immediately.
Variation: For Piña Colada Granitas, stir ½ cup coconut rum into the liquid before freezing.
