Oatmeal Cherry Cookies

Makes about 4 dozen

Ingredients

1 cup butter, softened
1 cup brown sugar
½ cup sugar
2 eggs
1 tsp. vanilla extract
1 ½ cups flour
1 tsp. baking powder
½ tsp. salt
2 cups quick-cooking or old-fashioned oats, uncooked
1 ½ cups dried tart cherries
1 cup semisweet chocolate chips

Directions
  1. Preheat oven to 350°.
  2. In a large mixing bowl, beat butter, brown sugar and sugar on medium speed until creamy (3-4 min.).
  3. Add eggs and vanilla; beat well.
  4. Combine flour, baking powder and salt; add to egg mixture.
  5. Stir in oats, cherries and chocolate chips.
  6. Drop rounded tablespoonfuls of dough onto ungreased cookie sheets; bake in preheated oven until golden-brown (10-12 min.).
  7. Remove from oven; let cookies rest on cookie sheets for 1 min., then transfer to wire racks to cool completely.
  8. Store cookies in a tightly covered container until ready to serve.
