Melon Ice Pops

Makes 4-8 ice pops (depending on mold size)

Ingredients

2 lbs. (about 6 cups) Minnesota Grown cantaloupe chunks, chilled
3 tbsp. Kowalski's Freshly Squeezed Lime Juice (from the Produce Department)
¼ cup Lime Simple Syrup (recipe below) or Kowalski's Lime Simple Syrup

Directions
  1. Add about ½ of the melon to a food processor or blender; purée.
  2. Add remaining melon to the blender; process until mixture is completely smooth.
  3. Stir in lime juice; add simple syrup and stir again.
  4. Pour mixture into 8-10 ice pop molds, leaving ¼" empty at the top of each mold to allow for expansion.
  5. Insert 1 ice pop stick into each mold; freeze until solid (about 2 hrs. depending on mold shape and size).

LIME SIMPLE SYRUP: In a microwave-safe glass, combine 2 tbsp. sugar and 2 tbsp. water. Microwave until hot; stir to dissolve sugar. Stir in 2 tbsp. Kowalski's Freshly Squeezed Lime Juice (from the Produce Department). Makes ¼ cup.

Tasty Tip:

  • Try this recipe with other melons, like watermelon or honeydew, instead of cantaloupe.
