Eggnog Rice Pudding
Ingredients
3 cups (about 2 bags)
frozen brown rice
1 ⅓ cups
eggnog
½ cup
brown sugar (or more to taste)
½ cup
raisins, plus more for garnish, if desired
- dash
Kowalski's Ground Cinnamon (or more to taste)
- dash
Kowalski's Ground Nutmeg (or more to taste)
- chopped pistachios or chopped toasted walnuts, for garnish, if desired
Directions
- Prepare rice according to pkg. directions.
- In a small saucepan, combine eggnog and rice; bring to a boil over medium heat.
- Stir in sugar and raisins.
- Reduce heat to low; simmer for 5 min. or until eggnog is mostly absorbed.
- Sprinkle with cinnamon and nutmeg; garnish with nuts and additional raisins, if desired.
