Herb Vinaigrette

Makes about 1 cup

Ingredients

3 tbsp. white balsamic vinegar
1 tbsp. Dijon mustard
1 tbsp. minced shallots
¾ tsp. (approx.) kosher salt, to taste
¼ tsp. (approx.) freshly ground Kowalski's Black Peppercorns, to taste
½ cup Kowalski's Extra Virgin Olive Oil
2 tsp. finely chopped fresh Italian parsley
2 tsp. finely chopped fresh chives
2 tsp. finely chopped fresh dill

Directions
  1. In a medium mixing bowl, whisk together vinegar, mustard, shallots, salt and pepper.
  2. Drizzle in oil very slowly, whisking constantly to form an emulsion.
  3. Whisk in remaining ingredients; adjust seasoning to taste.
