Fried Eggs

Directions
- Crack eggs into a small bowl or ramekin; place near the stove.
- Heat a small to medium cast iron or nonstick skillet over medium-high heat until it’s hot enough that a drop of water sizzles rapidly on contact.
- Reduce heat to medium. Add warm oil to the pan; gently tilt pan until oil fully covers the base of the pan and begins to shimmer.
- Carefully pour eggs into the skillet one at a time. Let eggs cook, gently tilting the pan occasionally to redistribute the oil, until edges are starting to crisp and whites are starting to set near the yolk (about 1 ½ min.).
- Using a thin spatula, gently flip eggs one at a time; continue cooking to desired doneness (about 30 sec. more for runny yolks or 1-1 ½ min. more for medium to medium-firm yolks).
Good Question: What is the difference between fried eggs and eggs over easy?
Fried eggs refers to the method used to cook the eggs. Over easy refers to the fact that the eggs are flipped ("over") during cooking and served with runny ("easy") yolks. Over medium and over hard are terms used to describe partially or fully set yolks, respectively. Sunny-side-up eggs are not flipped during frying and almost always have runny yolks (a cook may add hot water to create steam and/or cover the pan with a lid to cook the top of the egg white more thoroughly). Basted eggs are a style of fried egg where hot oil, butter or bacon drippings are spooned over the whites (and possibly the yolks as well) while cooking. They are not usually flipped.
