Pineapple Bruschetta

Ingredients

1 French baguette, cut into about 30 slices
- Kowalski's Unsalted Butter, melted
¼ cup superfine sugar
¼ tsp. cinnamon
8 oz. mascarpone cheese
1 large pineapple, peeled, cored and finely chopped
- Kowalski's Pure Honey, for finishing

Directions
  1. Preheat oven to 375°.
  2. Lightly brush both sides of each bread slice with melted butter.
  3. In a small mixing bowl, completely combine sugar and cinnamon; sprinkle over both sides of each bread slice, reserving some cinnamon sugar for finishing the dish.
  4. Arrange bread on a baking sheet; bake in preheated oven until crisp on the edges (8-10 min.), turning halfway through
  5. Remove from oven; let cool.
  6. Spread one side of each slice evenly with mascarpone; top with chopped pineapple.
  7. Drizzle lightly with honey; sprinkle with reserved cinnamon sugar before serving.
