Italian Stuffed Figs

Serves 12

Ingredients

2 cups fruity Italian red wine (such as Nero d'Avola or Primitivo)
24 dried figs
¼ cup sugar
3 oz. Gorgonzola Dolce or Gorgonzola Piccante cheese, cut into 24 chunks
12 slices prosciutto (such as Prosciutto di Parma or Prosciutto di Carpegna), thinly sliced
- chopped fresh chives, for garnish
- red grapes, sliced in half lengthwise, for garnish

Directions
  1. In a small saucepan, bring wine to a boil.
  2. Lower heat; add figs and simmer until figs are tender (about 5 min.). Remove figs from the pan; set aside.
  3. Add sugar to the wine in the saucepan; simmer until reduced to ½ cup. Remove from heat; set aside.
  4. Remove stem and cut an "x" in the top of each fig; stuff opening with cheese.
  5. Cut each prosciutto slice in half. Place a stuffed fig in the center of each prosciutto rectangle; wrap prosciutto around each fig.
  6. Drizzle a serving plate with wine reduction; set prepared figs on top.
  7. Drizzle with additional syrup; garnish plate with chives and red grapes.
