Parmigiano-Reggiano di Montagna 993, our Signature Parmesan cheese, features a slightly salty, rich, sharp and sweet flavor and a delicate, granular texture. An eight-century-old process is still used today to create small batches of this incredible cheese. Each wheel is aged 24 months on the farm – never in a warehouse – to assure its superior flavor and texture. By law, Parmesan is made only in Italy's Modena Mountain Region, a pastoral setting 3,000 feet above sea level. Handmade with raw cow's milk on one of only 12 farms, Parmigiano-Reggiano conforms to strict standards of production to ensure the authenticity of this beloved cheese.
