Greek Edamame Salad
Ingredients
12 oz. bag
frozen shelled edamame, thawed
8.5 oz. jar
julienne-cut sun-dried tomatoes in olive oil and herbs, drained and blotted dry
4 ¾ oz. jar
pitted Kalamata olives, drained
½ cup
chopped red onion
½ cup
Girard's Greek Feta Vinaigrette
4 oz.
crumbled feta cheese
Directions
- In a medium bowl, combine edamame, tomatoes, olives, onion and vinaigrette; gently fold in cheese.
- Refrigerate for several hrs. to blend flavors.
