Easy Tiramisu

Ingredients

⅔ cup very strongly brewed coffee or espresso
½ cup superfine sugar, divided
12 oz. mascarpone
2 ½ cups heavy cream
2 tsp. Kowalski's Organic Madagascar Vanilla Extract
4 ½ oz. (about 1 ½ pkgs.) soft ladyfingers
3 oz. bar Kowalski's Triple Espresso 72% Cocoa Chocolate Bar, shaved

Directions
  1. In a small glass measuring cup, combine coffee with 2 tbsp. sugar; stir together until sugar dissolves, then set aside.
  2. In a large mixing bowl, beat remaining sugar and next 3 ingredients (through vanilla) with an electric mixer on low speed until thoroughly combined. Continue beating on medium speed just until soft peaks form.
  3. Arrange ½ of the ladyfingers in the bottom of a 7x10" (about 2 ¾ qts.) glass baking dish.
  4. Evenly spoon ½ of the espresso mixture over ladyfingers to soak.
  5. Evenly spread ½ of the mascarpone mixture over ladyfingers; sprinkle evenly with ½ of the shaved chocolate.
  6. Repeat layers with remaining ingredients.
  7. Refrigerate, covered, for several hrs. to overnight before serving.
