Pickled Sweet Corn Relish

Ingredients

12 oz. frozen sweet corn kernels
¾ cup finely chopped celery
½ cup finely chopped red bell pepper
¼ cup finely chopped red onion
½ cup apple cider vinegar
1 ¼ cups sugar
¾ tsp. dry mustard
½ tsp. mustard seeds
¼ tsp. kosher salt
¼ tsp. celery seeds
¼ tsp. ground turmeric
¼ tsp. crushed red pepper flakes

Directions
  1. In a large saucepan, combine all ingredients over high heat, stirring to combine; bring to a boil.
  2. Reduce heat to low; simmer for 25 min., stirring occasionally.
  3. Let relish cool at room temperature for at least 1 hr. (up to 3 hrs.).
  4. Store in the refrigerator, covered, for up to 5 days.
