Our recipe for Salted Chocolate Caramels features a bit of chocolate in the caramel for a unique flavor, plus a bit of sea salt to cut the richness. Be sure to use a candy thermometer to ensure the perfect consistency. If the caramel doesn’t get warm enough, it will fail to hold its shape; too warm, and it will become brittle and hard to chew.
