A Taste of Tomatoes: A Cooking Class with Chef Lenny Russo

Summers tend to be short in the temperate regions of the Northern Hemisphere, and Minnesota is certainly no exception to that. One of the many joys of our short time in the summer sun is the pleasure we get from slicing into a perfectly ripe tomato. Since tomatoes need warm days and cool nights to fully reach their flavorful peak, late August and September offer us the best time to enjoy their bounty.

In our upcoming class, A Taste of Tomatoes, acclaimed local chef Lenny Russo will be sharing a variety of ways to engage in tomatoey indulgence. Recipes presented in the class will include:

  • A creamy heirloom tomato soup
  • A spicy tomato chutney to accompany a cheese and charcuterie board
  • A method for preserving Roma tomatoes that can be tossed with pasta or simply enjoyed on a baguette
  • An herb-infused tomato vinaigrette to dress late-harvest greens

Guests will be able to see each recipe prepared step by step and have an opportunity to sample the finished products.

This class will be held on Tuesday, September 19, from 6-8 p.m. at Kowalski's Woodbury Market.

About Chef Lenny Russo

Chef Russo is the owner and executive chef of the former Heartland Restaurant in St. Paul. He is a multiyear finalist for the James Beard Best Chef Midwest Award and author of Heartland: Farm-Forward Dishes from the Great Midwest. Chef Russo is best known for his hyper-local approach to fine dining.
