Featuring hearty mushrooms to bring texture and toothiness to the dish, it's accented with aromatic onion and garlic, plus fresh woody thyme. You can use any nondairy milk here. Oat milk and rice milk are both good for adding creaminess (a boon for pasta), but soy is nicely neutral as well.
